Chef Geumseung Chang
Bringing a modern sensibility to authentic Cantonese cuisine
Chef Geumseung Jang is a master of Chinese cuisine who has led Palsun at The Shilla Hotel in Seoul for more than 40 years, carrying forward the legacy of a century-old family tradition in Chinese gastronomy. Based on deep insight into authentic Cantonese cuisine and craftsmanship, he meticulously brings out the original flavor of each ingredient, creating elegant dishes that encompass tradition and modernity. At the same time, he thoughtfully incorporates Palsun’s healthy culinary philosophy of “3 Low, 1 High” (low fat, low calorie, low cholesterol, and high protein), delivering a distinguished gastronomic journey that balances wellness with exceptional flavor.
